For this recipe you’ll need these ingredients:
Serves 2 to 4
30 to 45 Minute Cooking Time
1 Cornish Game Hen – Cut in half
Salt & pepper to taste
2 Tbsp. butter – to place under skin of hen
2 cloves garlic – diced
Extra virgin olive oil – to drizzle over hen
Roasted garlic & red bell pepper seasoning – sprinkle over hen

Fire up the BBQ or the oven at 400*. Place halves of hen bone side down onto a large piece of foil or glass baking dish. Insert butter pieces under skin, by cutting small slits to tuck butter and garlic. Drizzle hen with olive oil, then sprinkle seasoning, salt, pepper over hen. Fold side of foil making a basket place on barbeque for 30 minutes (or cover glass baking dish to keep moisture in hen). Remove from foil place directly on to grill to brown (uncover to brown in oven). NOTE: Time on hen may vary due to the size, so keep checking for doneness by gently poking leg with toothpick to see if juices are clear. You can do this while it’s browning on grill. Remove from grill, let rest for 5 minutes. Serve with brussel sprout side dish.
